Buffalo Chickpea Chili

It’s been unseasonably warm ’round these parts, so what better time to post a good old chili recipe, am I right?! I love chili, and while I enjoy the recipe I’ve made for years, as soon as I saw this one, I knew I had to try it.

This one is called Buffalo Chickpea Chili and is courtesy of one of my favorite food bloggers, Chocolate Covered Katie. Lest you think this chili has chocolate, it does not. Only some of Katie’s creations are chocolate covered.

Superhero Muffins

Superhero Muffins are THE runner’s food of the moment. Almost every runner whose blog I follow has made them, and I will NOT be left out in the cold. The recipe comes from Run Fast Eat Slow, a lovely cookbook written by elite runner & 2017 NYC Marathon champion Shalane Flanagan and chef & food writer Elyse Kopecky.

I bought this cookbook in late December with the hopes of not only learning how to cook food specifically for runners, but just learning how to cook… other stuff. I tend to cook the same things over and over, and I usually don’t grow tired of eating the same things over and over until I do, and then I immediately want to find ways to mix things up. So I bought the book.

Very Excellent Vegan (If You Want) Chili

I don’t have many recipes I can claim as my own (I am more recipe follower than recipe creator) but this might be the closest to my own. I discovered the source a few years ago when I was searching online for a good vegan chili recipe. I’ve never fully been a vegan, but for years I preferred eating vegan protein at home as it just seemed healthier and also I hate touching raw meat.

Pumpkin Banana Bread

It’s time for another post where I make someone else’s recipe! This is a GOOD one. I thought it would be a good day to finally post this, seeing as I am still recovering from yesterday’s half marathon, and I don’t think I’ll be running tomorrow either. Just a tad sore today.

During the last year of my mom’s life, I spent a lot of time scouring the internet for vegan recipes. Desserts mostly. My mom always had to have some kind of cookie or muffin or baked good in the house. And let’s face it, so do I.

Vegan Gingerbread Cookies

It’s time for another post about BAKING!

By the way, I am not a baker. I mean, I have baked. I will bake. But I don’t create recipes. I don’t know how. I still have to double check labels to see if I’m using baking soda or baking powder, and I always forget what either of them do or how they’re different. I know one container is square and one is circled shaped.

So that’s where I’m coming from.
